Wakabotan “Hinohikari 50” Junmai Ginjo

The experience: “Hinohikari” is the name of the rice, a local Oita table varietal meant for eating. It’s an ordinary rice rarely used for brewing. We love the subtle sweetness paired with a hook of acidity and texture coming from this interesting choice of rice. Serve chilled.
