Each sake they produce is extremely unique, mostlybecause of their natural/low-intervention brewing methods. To start, they’re making a lot of sake that is unpasteurized, undiluted and unfiltered, which is still niche in the modern sake world. They’re also using a lot of brown rice in production (low polish rice) and tapping into traditional brewing methods.
