Our idea of “natural sake”. We’re not sure if the term “natural” is entirely transferrable between wine & sake, but we do know that these makers are being intentional about their ingredients and processes. They’re making decisions in favor of the environment andallowing us to taste sake at its rawest form.
How?
By using organic rice, little to no machinery in the brewery, leaving the sake unpasteurized (nama), buying rice locally, using ancient brewing methods that feel like “less intervention” (despite being labor intensive), repurposing the bi product of sake making (sake kasu) & the list goes on!
