Philippe is the nephew of Marcel Lapierre, a legendary natural winemaker in Beaujolais. Philippe worked with his uncle, the late Marcel Lapierre, in Morgon, and later at the highly regarded Domaine Prieur-Roch in Cte de Nuits before setting up his own prestigious ngociant business.
Although he owns no vineyards himself (a concept which allows himto stay nimble and flexible in his business) Philippe handles everything in the vineyards from pruning to bottling. His philosophy is that nature shall govern the production and not new technology. He uses whole bunch fermentation for reds and whites, pressing carefully so as not to break the stems.
Philippe does not use chemical fertilizers or sprays in the vineyards and uses the natural yeast. However, sulphur is used to a limited extent to stabilize the fermented wines. The wines produced are unique for each year. Each soil and cultivation, terroir, is evident in the finished wines. This mixed box is anincredible introduction to the wines of Philippe Pacalet.
2x Moulin-a-Vent2017:this wine is loaded with tonsof black cherries, lavender and blue slate all of which follow through to a full body, with firm and fine tannins and a beautiful finish.
2x Ladoix Blanc 2018: This is an incredible white wine from an appellation more known for easy drinking wines.
2x Nuits-st-Georges 2017:Thisis spicy, with chalk and floral aromas, as well as cherries and strawberries. Medium-bodied with firm and silky tannins, but then a wild and vivid finish of stones and berries. Gorgeous.
