I always say this Champagne hits your palate in three distinct waves and I dont even know how to explain that but I stand by it. Quick attack, assertive mid palate and long lingering persistence. Christophe Mignon is a biodynamic producer working in Vallee de la Marnes which is v cool because Vallee de la Marnes doesnt see some of the respect it deserves. Its known for producing mostly Pinot Meunier – a grape that plays the quiet supporting role to Chardonnay and Pinot Noir. In this case its finally landed the role of its dreams! Its the main event and its thriving! Drink this if you like a good underdog story and a truly wonderful bottle of bubbles.
