Fully destemmed and macerated for 24 days, then aged 8 months on lees in sandstone jars. The nose is a fascinating bouquet of bergamot, saffron, preserved lemon, and candied melon. On the palate, you get Grenache’s distinctive mineral structure, gentle spices, and an aniseed finish. The complexity from the stems adds remarkable depth – significantly more complex and dense than previous vintages, with impressive length.
