junmai yamahai tarusake /Miyoshino Jozo,Nara
The experience:The base sake is a yamahai, giving it its own body and complexity, even before putting it in cedar barrels. This combo makes a very well balanced, earthy & sharp sake that lends itself well to several temperatures.
Process:Yamahai, 7 day storage in cedar barrels before bottling. ABV: 15%
Ingredients:70% polishedGin no Sato, Gohyakumangoku, Hitogokochi
Storage:keep in a cool, dark place
