Fukucho or “Forgotten Fortune” is brewed by Imada Shuzo, led by female toji Miho Imada. She’s impressive in many ways, but is probably most known for her expertise in brewing ginjo style sake with soft water. Hiroshima’s soft water puzzled brewers for generations but it was in Imada-san’s town, Akitsu, that Imada-san’s “mentor” Senzaburo Miura, developed the soft water brewing method in the late 1800s.
