Kent Pinot Noir takes the lead in Digby’s NV Brut, with a gooddollop ofreserve Chardonnay with an extra 18 months of lees which brings those fabulous bready-pastry flavours – think delicate layers of millefeuille, filo pastry layered with apricot jam, apple compote, perfectly ripe pear, crushed toasted nuts, and a little creme anglaise. Subtle and well-balanced richness, with a lovely mellowness to it too.
