This white is made in the Appassimento method. Naturally fermented. Hand picked and hand sorted from reduced crop. Fermented and aged for 10 months in French oak barrels.
Appearance: Light peachy-pink colour.
Nose: Swiss herbs, apple, and candied lemon zest.
Palate: Rich, off-dry, well balanced acidity, and medium bodied with a long finish. The
Appassimento style causes this wine to appear sweeter than it tastes.
Food pairings: This Pinot Gris is great with white sausage, crab crakes, and oil-based pastas. It would stand up to Cheddar without a problem, and pairs well with Parmesan dishes. A great white wine that can stand up to strong flavours like mustard or horseradish.
