Very special Bourgogne Chardonnay. Instead of a classic Bourgogne Chardonnay with wood maturation, this Chardonnay is matured on epoxy tank. This gives the wine a very fresh, mineral character with beautiful acids. Yet the wine has sufficient thickness because 10% of the wine has botrytis had. This is also called noble rot or Noble rot. A wine with 100% botrytis grapes gives a sweet golden yellow white syrupy dessert wine. Since the chardonnay is quite light and fresh, the grapes with 10% noble rot give sufficient roundness and support to still a ‘thick’ white burgundy. Instead of a buttery touch the wine has more finesse and in the background a hint of honey (not sweet!). Very special powerful chardonnay with much finesse.
