Olivier Horiot is a talented winemaker from the Cte des Bar. He practices a living and biodynamic culture in the Riceys wine village. Olivier grew up in the region and now grows more than 8 hectares of biodynamic and Biodyvin certified grapes. In this committed craftsman we obviously find ross from the Riceys and many other Champagne hillsides, each vinified according to their locality. They embody the vivacity and aromatic finesse of Pinot Noir du Nord, once widely produced in the region. But the bubbles are not left out, like Sve characterized by the generosity of this aubois monocru. Olivier carries out a lot of trials, micro-cuves, forgotten grape varieties, quiet wines… His reputation is exploding, rightly so because everything is delicious and intelligent at the estate.
