Ayala, a Champagne house now owned by Bollinger, produces a ‘Blanc de Blancs’ in limited quantities only in their best vintages. Winemaker Caroline Latrive, who has rich experience in a wide variety of the leading Champagne houses, picks Chardonnay grapes only from Grand Cru vineyards to craft it.

Expect a luxurious, rich texture with pronounced notes of passionfruit and peach. The fruit flavours are balanced by a refreshing, dry minerality and a smooth finish, with luscious aromas of ripe lemon, citron and jasmine accompanied by subtle notes of acacia honey and Timut pepper.

Its lively and well-balanced start, which shows a lovely density. Flavours of passion fruit, citrus, spices and Mirabelle plum tart, with a long, lingering finish with a chalky minerality.

Serving: The ultimate epicurean aperitif, Le Blanc de Blancs 2016 also pairs marvellously with Turbot with beurre blanc, turkey with endives and lime, our Goats Cheeses or an exotic fruit Pavlova.
