Vias Serranas is an exciting new venture from 4 qualified friends in Sierra de Salamanca, Spain. The region sits in the southern section of Castilla y Len, not far from the Portuguese border. Cesar Ruiz (sommelier, winemaker, and bottle shop owner extraordinaire) has recruited a leading expert in biodynamic viticulture, the president of the Sierra de Salamanca VCIG, and long-time winemaker of the regions largest operation, to collectively purchase a 12-hectare plot of vines consisting mostly of Rufete, a red grape with soft tannins. The grape itself, along with the regions rolling hills and granite underlays have drawn parallels to Beaujolais. As a result, their wines are whole cluster fermented in tank, and aged in 500L French oak, not dissimilar from the aforementioned region.
