Maris Otter is British winter barley, and the only winter barley approved for use by the Brewer’s Institute. It is considered by many to be the best Pale Ale malt available. Maris Otter is still floor-malted, a labor intensive process in which the barley is turned by hand on large floors. This malt may be used for up to 100% of mash grains.
