Honjozo sake is sake with a little brewers alcohol added. The intention is not for the sake to be boozy-er, but to make it balanced. We often associate a crisp, short finish with honjozo sake. Daishichi "Honjozo Kimoto" Honjozo Kimoto / Daishichi Shuzo, Fu
