Thanks to the fermentable sugars in the pears, no sugar is added, making this a well balanced, dry bubbly cider.

Northern Spy apples, North Fork + callery pears, Hudson Valley, NY

The Vinification: a couple of buckets of pears were macerated in the cider, then racked into neutral French oak 500L puncheons and left undisturbed for 6 months before canning.refermented in can to create bubbles. ABV: 7-8%
