Un Mlange d’acide qui pour fonction d’quilibrer les trois acides principaux dans un vin. En quilibrant l’acidit, la levure se fermente facilement et assure que le vin n’ait pas un got fade. Le Mlange d’acide consiste de 50% d’Acide Malique, 40% d’Acide Citrique et 10% d’Acide Tartrique.
