Who says Sauvignon Blanc cant age? This 2009 vintage, from the heart of Marlborough yet worlds apart, redefines what this varietal can achieve. Handcrafted in minuscule quantities, it showcases untamed brilliance, long skin contact for texture, natural barrel fermentation without additions, and extended time on fine lees for its signature silkiness. Dry, explosively rich, and profoundly complex, it represents the pinnacle of stately Sauvignon Blanc. A true artisan masterpiece with remarkable aging potential.
The must is pressed and transferred to the 500lt French oak puncheons for an initial fermentation conducted by indigenous yeasts. The young wine then went through a natural secondary malolactic fermentation and was aged in the same barrels for a further 12 months with regular lees stirring. No fining and only lightly filtration prior to bottling.
We handpicked this wine from our 14 years old, low yielding vines showing off aromas of crisp honeyed grapefruit and pineapple. A pure, elegant Sauvignon with gorgeous texture and fine acidity for a strong backbone.
10 years if kept at constant temperature under 14 degree Celsius
Well suited to fish dishes, white meats, seafood and cheeses.
