Sourced from80% Churchside Vineyard & 20% South Clos. Destemmed, no crushing, then cold soaked for 3-5 days. Fermentation took place entirely in large tonneaux, followed by 100% malolactic fermentation in barrel. Aged exclusively in seasoned French oak.
