Winemaking Notes: Mechanically harvested from select Niagara vineyards. Pressed frozen in barrel presses. Sugar concentration of the final juice blend was 37.9Bx. Fermented warm in tank with selected yeast strains. Fermentation arrested once desired sugar to alcohol ratio was achieved.
