FLAVOUR PROFILE
Deep garnet colour with a bouquet of black currant, black cherry, leather, cigar box, mocha, and smoky oak. This full-bodied wine has firm, but not aggressive, drying tannins, great structure, and moderate acidity. Juicy, ripe dark berries, cherry, and spice develop on the palate. The extra-dry finish shows wonderful notes of black tea, black cherry, blackberry, chocolate, and spice.
Pairs well with grilled steak au jus and sauted mushrooms; beef tenderloin wrapped in bacon; pot roast; roast beef; rosemary lamb chops; roasted leg of lamb; three-year-old Canadian cheddar.
Winemaking Notes: Hand-harvested from Sandhill Estate Vineyard. Gentle crush, then fermented in small open top fermenters. Full malolactic fermentation. Each varietal is aged individually in oak barrels for 18 months, then the top barrels are selected and blended together, then returned to oak barrels for a further 2 months to allow integration in barrel before bottling. Aged in new (25%) and older, French oak (60%) and American oak (40%) barrels.
