Nicknamed the Wildling because of its expressive character and complexity that comes from fermentation in barrel with wild, ambient yeasts. A complex nose of apples, butter, lime zest, peach, distinct earthiness, almonds and vanilla. The palate is silky with apple butter, caramelized peaches, key limes, wild mushrooms, and baking spices.
Food Pairing: Fried chicken, kimchi quesadillas, Moroccan couscous salad, grilled halloumi and preserved lemon flatbread.
Winemaking Notes: Hand-picked and whole bunch pressed, this wine ferments and then ages for 12 months in French oak barrels with some lees stirring.
