Winemaking: Organic Aligot grapes were harvested by hand. Fermentation with indigenous yeast in stainless steel tanks. This is a blend of 2022 (25%) and 2023 (75%) vintages. Bottled with no fining or filtration and just a touch of sulphur.

This Wine: Still white wine that represents one of the natural wine world’s most iconic cuves. Clean and precise with a lovely balance of citrus, green fruit and minerals. Still great value after all these years. Alice and Olivier blended 2022 and 2023 vintages to crate a more balanced wine.

Notes on the Winemaker: Alice and Olivier de Moor produce sublime white wines in the Chablis village of Courgis in Northern Burgundy. They have created a serious reputation for themselves which now means the wines are like gold dust. You can expect precision and finesse.
