This wine is a blend of their Bel-Air and Clardy parcels, both of which have different variants on limestone – the former is more rocky and the later with a higher percentage of chalk. It’s no surprise that the resulting wine is bracingly mineral. A mixture of old barrels, foudre and enamel-lined tanks to raise the wine in keeps things sharply cut. As usual, there is plenty of detail, precision and edge, but not lacking in fruit – crisp apple, ripe pear and salty lemon.

Alice & Olivier De Moor are pioneers under the Chablis appellation – one of the first producers to break from standardised tradition to create truly expressive wines in this highly regarded, fair to say household name, of Burgundy. The vineyard work is organic with the grapes all picked by hand. Following spontaneous fermentation the wines are left to rest adequately before bottling, and nothing is added or removed at all, bar a tiny addition of sulphites in the very final stages. It goes without saying that our reserves of De Moor are on the small side! Don’t miss out.
